EASY CINNAMON ROLLS

Found a recipe for some "Easy Cinnamon Rolls" made from ready made Crescent Rolls .... I made them and They. Were. AMAZING!!!

Easy Cinnamon Rolls

1 (12 ounce) package crescent rolls
2 tablespoons butter, melted
1/3 cup brown sugar
1 tablespoon ground cinnamon
1/3 cup chopped pecans (optional)

Icing
1 1/4 cups powdered sugar
2 tablespoons milk
1/4 teaspoon vanilla extract
1/8 teaspoon ground cinnamon

Preheat oven to 375 degrees F. Prepare a sheet pan by lining with parchment paper. Unroll the crescent roll dough and separate into two rectangles. Brush the melted butter evenly over the two rectangles of dough. In a small bowl, mix the brown sugar and cinnamon together; sprinkle over the butter. Sprinkle chopped pecans over the sugar and cinnamon mixture. Roll each rectangle of dough up evenly, then cut into 1-inch slices. Place the slices cut side up on the prepared pan. Bake for 12 - 15 minutes or until rolls are golden brown. Cool, then drizzle with icing.

To make the icing: In a small bowl, combine powdered sugar, milk, vanilla, and cinnamon. Stir until smooth. Drizzle over cinnamon rolls.

Tips:
  1. The recipe calls for 1 (12oz) package of Crescent Rolls, but I prefer Cinnamon rolls extra "cinnamony and gooey*, so I used 1 (8oz) Crescent Roll package and followed the full recipe for the butter, cinnamon and sugar filling and icing.
  2. Instead of baking on a cookie sheet, I used a greased muffin pan to help keep their shape as they baked. Be sure to keep an eye on them.. with the extra sugar filling you don't want them to burn.
  3. After they cool, you can drizzle the icing with a spoon or for better control, mix the icing and put it in a plastic squeeze bottle with a fine tip.

Home Made Pasta Sauce


What do you do when your backyard garden slams you with tomatoes?? You dust off your food processor, consult Pinterest, pick a recipe and proceed to make a crap load of homemade pasta sauce ... Fresh Tomato and Basil Pasta Sauce to be exact! This is the first time I have ever made sauce from scratch so the jury is still out on how good it is ... but if the smell of it simmering right now is any indication ... it will be AMAZING!! ... 

Fresh Tomato and Basil Pasta Sauce

2 quarts tomato puree (about 6 pounds tomatoes, hulled and pureed in a blender or food processor)
1 large onion, diced
1/4 cup fresh basil, chopped
1 Tablespoon honey
1 Tablespoon dried oregano
1 teaspoon salt
1 teaspoon thyme
1 teaspoon garlic powder
1/2 teaspoon pepper

Saute onions in a large pot, until soft and translucent. Add pureed tomatoes and all of the seasonings. Bring it all to a boil and then reduce to a simmer. Simmer on low heat for about 2 hours, until the sauce is a thickness that you like. Stir occasionally (more frequently toward the end).

Pour into jars or freezer bags and freeze (or refrigerate if you plan to use it soon).  ... ENJOY!! 

SKINNY BANANA COOKIES

I didn't believe you could make healthy cookies that taste good out of just bananas, oatmeal and chocolate chips, so I made them and was pleasantly surprised! YUM!! Next time I will add dried cranberries

They're called Skinny Banana Cookies ...Here's the recipe!! ... Give 'em a try! Enjoy!! ... :D


Skinny Banana Cookies (Makes 12-16 cookies)

Ingredients:
2 medium ripe bananas, mashed
1 cup of uncooked Old Fashioned Oats
1/4 cup chocolate chips

Directions:
Preheat oven to 350°F. Spray a cookie sheet with nonstick cooking spray. Mix the mashed bananas and oats in a bowl. Fold in the chocolate chips. Using a spoon, scoop up the batter and place on the cookie sheet. Bake for 12-15 minutes.

Gammy Time!!!

This is a very special week this week for me! It's "Gammy" time with Jaxson, KL, and Cory to help in this adjustment to their new life roles ... and they are doing it BEAUTIFULLY!! From my perspective, watching them love and getting to know their sweet baby boy just warms my heart....

.... As for me, the sweet familiar feeling of when I was in this place in time with Cory ... holding my grandson in my arms, calm and relaxed, making those baby "squeaky" sounds, and looking at me with those sweet eyes just never gets old. He is such a good baby and so fortunate to have KL and Cory as his parents ...
This is going to be a fun journey Pee Wee, I promise you that my sweet Jaxson.....
